Rapscallion Soda in Glasgow take fresh lemons and carefully wash and soak them by hand. Once dried they extract the wonderful flavours, zesting only by hand to extract the vibrant oils as gently as possible. This wonderful punchy zest is 'candied' overnight with raw organic cane sugar.
Think Lemon meringue pie without the mountain of sugar.
